A mild dish that’s rich in spice, a creamy texture from coconut milk... and a lovely tingle to finish, There's no compromising on depth of flavour. Works great with fish, chicken, or prawns. For a non-fish option, I suggest tofu, squash or sweet potato combined with green beans and peppers. Paneer is great too.
You will need:
- 500g white fish / salmon / prawns*
- 400g can chopped tomatoes
- 400ml can coconut milk
*Vegetarian options: create your own combination of vegs such as
- Cauliflower
- Green beans
- Butternut squash
